Low-Carb Focaccia with Flaxseed Flour
This low-carb focaccia proves that bread and a lower-carb way of eating can happily go together. A batter of flaxseed flour, eggs and toasted sesame comes alive with Parmesan, sun-dried tomatoes and black olives for a savoury, Mediterranean-style flatbread. Each piece brings around 6 g of protein and 5 g of fibre with very few carbs. It's at its best fresh from the oven, still slightly warm, alongside a crisp green salad.
Ingredients
- 5 eggs
- 200 g flaxseed flour, or whole flaxseeds, finely ground/milled
- 25 g sesame seeds, toasted in a dry pan
- 1 tsp baking powder
- 1 tsp garlic salt, or use garlic and salt separately
- 120 ml still water
- 2-3 tbsp olive oil
- black pepper, to taste
- Parmesan, freshly grated, to taste
- sun-dried tomatoes, to taste
- black olives, thinly sliced, to taste

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions
- Toast the sesame seeds in a dry pan over low heat, stirring constantly until lightly golden, then set aside.
- Thinly slice the olives and freshly grate the Parmesan.
- Beat the eggs in a large bowl.
- Gradually add the flaxseed flour, toasted sesame, baking powder, garlic salt, water, olive oil, pepper, olives, sun-dried tomatoes and Parmesan to the eggs, stirring everything into a smooth batter.
- Let the batter rest in the bowl for 2-3 minutes so it can firm up a little.
- Preheat the oven to 180C (fan 160C). Grease a shallow ovenproof dish or pan with butter or oil.
- Spread the batter evenly in the dish and bake for 20 minutes.
- The focaccia is ready when it's lightly golden and the surface springs back when gently pressed.
- Let the focaccia cool briefly, then cut into 12 pieces and serve. A fresh salad makes the perfect partner.
