Low Carb Protein Bread
A protein bread with no grain flour at all: quark and ground almonds form the base, along with eggs and a little raising agent. That makes the bread low carb, gluten-free and pleasingly high in protein. If you like a coarser crumb, replace part of the quark with cottage cheese.
Ingredients
- ground flaxseed, also sold as milled linseed
- ground almonds
- oat bran
- eggs
- low-fat quark, or thick Greek yogurt / fromage blanc
- salt
- flaked almonds
Instructions
- Put all the ingredients (ground flaxseed, ground almonds, oat bran, 2 tbsp of the flaked almonds, eggs, quark and a pinch of salt) into a bowl and mix well.
- Transfer the mixture to a small loaf tin.
- Scatter the remaining flaked almonds over the top.
- Bake at about 150C (fan 130C) for about 30 minutes. Your quark and flaxseed loaf with an almond crust is ready!
