Sunflower Seed Bread (Grain-Free)
This crusty sunflower seed bread is a real weekend breakfast favourite. A mix of ground almonds, coconut flour and soya flour gives it a moist crumb and a lovely crust, with no grains at all. Pile it high with cream cheese, tomato and cress, or go sweet with quark and banana: this loaf works both ways. The bread spice blend of anise, coriander, caraway and fennel adds a special touch, but you can leave it out if you prefer.
Ingredients
- 6 eggs
- 200 g cottage cheese
- 100 g ground almonds
- 100 g ground flaxseed, also sold as milled linseed
- 50 g coconut flour
- 50 g soya flour
- 1 sachet baking powder, about 15 g, or roughly 3 tsp
- 50 g sunflower seeds, plus a few extra for sprinkling
- 1 tbsp cider vinegar
- 1 tsp sea salt
- 1 tsp bread spice blend, a mix of anise, coriander, caraway and fennel; optional

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions
- Preheat the oven to 180C (fan 160C) and line a small loaf tin with baking paper.
- In a bowl, stir together the eggs, cottage cheese, ground almonds, ground flaxseed, coconut flour, soya flour and baking powder until you have a smooth, even batter.
- Add the sunflower seeds, cider vinegar, sea salt and, if using, the bread spice blend, then mix through.
- Spoon the batter into the prepared loaf tin and scatter a few extra sunflower seeds over the top.
- Bake in the preheated oven for about 45 minutes, until golden brown and cooked through. Let the loaf cool completely before slicing.

Frequently asked questions
Is this sunflower seed bread really grain-free?
Yes, the recipe contains no grains. If you need it to be gluten-free too, check that everything you use (such as the baking powder and soya flour) is certified gluten-free.
Can I leave out the bread spice blend?
Absolutely, the spice blend is optional. Without it the bread tastes milder and pairs beautifully with sweet toppings like quark and banana.
Can I swap the flours for protein powder?
You can. The bread will taste a little sweeter this way, so it's best to leave out the bread spice blend if you do.
How long does the sunflower seed bread keep?
Well wrapped in the fridge it keeps for about 3 to 4 days. You can also slice it and freeze it.
