Veggie Noodles with Creamy Mushroom Sauce
Colourful veggie noodles made from courgette and carrot meet a creamy, herby mushroom sauce. This dish comes together quickly, is genuinely satisfying and skips classic pasta altogether. If you have a vegetable spiraliser to hand, you can turn out a strikingly pretty plate in just a few moves. Perfect for anyone who wants a light but hearty meal.
Ingredients
- 250 g chestnut mushrooms
- 250 g white mushrooms
- 2 tbsp herb crème fraîche, or plain crème fraîche stirred with chopped fresh herbs
- 1 onion
- 1 clove garlic
- 1 large carrot
- 2 courgettes
- rapeseed or olive oil, for frying
- salt and pepper, to season

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Instructions
- Clean the mushrooms and cut them in half.
- Trim the carrot and courgettes, then turn them into veggie noodles using a spiraliser.
- Heat a little oil in a pan. Finely chop the onion and garlic and soften briefly.
- Add the mushrooms to the onion and garlic and cook over medium heat for about 10 minutes.
- Stir in the crème fraîche and season the mushroom sauce with salt and pepper.
- Meanwhile, heat a little oil in a second pan and cook the veggie noodles over medium heat for about 10 minutes. They should keep a little bite.
- Season the veggie noodles with salt and pepper, arrange on plates and spoon the mushroom sauce into the middle.
