This colourful veggie bake comes together in minutes, needs barely any prep and practically makes its way to the table on its own. Leek, courgette, pepper and mushrooms meet a savoury cottage cheese topping that turns wonderfully creamy in the oven. It's naturally gluten-free, low in carbs and still genuinely filling. Perfect for anyone who fancies something light but hearty in the evening.

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions

  1. Preheat the oven to 150C (fan 130C).
  2. Wash, trim and chop all the vegetables into small pieces.
  3. Tip the vegetables into a baking dish, layering them if you like. Season with salt, pepper, paprika and curry powder.
  4. Place the dish in the preheated oven and cook the vegetables for about 25 minutes.
  5. Five minutes before the end of the cooking time, spoon the cottage cheese (or herbed cream cheese) evenly over the bake and finish cooking.

Can I swap the cottage cheese for something else?

Yes, herbed cream cheese or quark work just as well and bake up lovely and creamy.

Does the bake work with large-curd cottage cheese?

Yes, chunkier large-curd cottage cheese is the classic choice and gives a creamy topping with a slightly coarser texture.

What other vegetables can I use?

Broccoli, cauliflower, carrots, tomatoes or aubergine all work well. Just use whatever you have on hand.

How do I get the cheese topping nicely browned?

Bake it until golden brown using conventional top and bottom heat, and switch on the grill briefly at the end for extra colour.

Is this veggie bake really gluten-free?

Yes, there's no flour or breadcrumbs in it. Just check the label on any spice blends to make sure they're gluten-free.

Can I prepare the bake ahead?

Yes. Prep the vegetables and the topping, keep them chilled, and only bake it just before serving.
