Turkey Schnitzel Hawaii
Toast Hawaii with a twist: instead of piling the classic topping onto bread, here it goes on juicy turkey escalopes. Slices of ham, fresh pineapple and melted Gouda in a savoury curry cream make this dish gloriously fruity and really satisfying. Best of all, the oven does most of the work, so there's barely any fuss at the hob. Perfect if you want a quick, protein-rich dinner on the table in no time.
Ingredients
- 4 turkey escalopes, or minute steaks
- 0.5 pineapple, fresh
- 4 slices cooked ham
- 4 slices Gouda
- 200 ml double cream
- salt and pepper, to taste
- curry powder, to taste
- 1 tsp instant vegetable stock
- 2 tomatoes, optional, as an alternative to the ham

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions
- Preheat the oven to 200C (fan 180C).
- Sear the turkey escalopes in a hot pan, then season with salt and pepper.
- Lift the escalopes out of the pan and arrange them side by side in a baking dish.
- In the same pan, warm the cream and season with curry powder, vegetable stock and a little salt and pepper.
- Pour the curry cream evenly over the escalopes in the baking dish.
- Top each escalope with a slice of cooked ham. If you'd rather skip the ham, use slices of tomato instead.
- Peel the pineapple, cut into slices or chunks and scatter over the ham.
- Finally, lay a slice of Gouda on each escalope.
- Slide the baking dish onto the middle shelf of the preheated oven and bake for 25 minutes, until the cheese is golden and bubbling.

Can I use tinned pineapple instead of fresh?
Yes, tinned pineapple works well. Just drain it thoroughly first so the sauce doesn't turn watery.
Is this recipe really low in carbs?
Yes, since there's no bread, the carb content stays low. The main sources are the pineapple and the cream.
Can I leave out or swap the ham?
Of course, you can use slices of tomato instead of ham. It makes the dish a little lighter and fresher in flavour.
Which cheeses work besides Gouda?
Emmental or Edam melt nicely too and pair beautifully with the pineapple and curry.
