Tender baby spinach, creamy goat's cheese, crisp-baked Serrano ham and roughly chopped hazelnuts: this salad is in a league of its own. A bright, zingy lemon dressing pulls everything together beautifully. It's on the table in under 20 minutes, so it works just as well for a quick lunch as it does for a light dinner. How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions

  1. Preheat the oven to 180C (fan 160C). Lay the Serrano slices side by side on a baking tray lined with baking paper and bake for 10 minutes, until the ham is crisp.
  2. Wash the spinach and spin it dry. Quarter the cherry tomatoes, removing the tough cores.
  3. Arrange the spinach and tomatoes on a serving plate.
  4. Add all the dressing ingredients (lemon juice, olive oil, water, honey, salt and pepper) to an empty jar and shake vigorously until smooth and emulsified. Drizzle the dressing evenly over the salad.
  5. Tip the hazelnuts into a plastic bag and bash them roughly with a rolling pin. Break the goat's cheese into pieces. Scatter both over the salad.
  6. Take the crispy ham out of the oven and lay it over the salad. Serve straight away.

Can I crisp the Serrano ham in a pan instead?

Yes. Fry the slices in a dry non-stick pan over medium-high heat until crisp. It's quick and a great alternative to using the oven.

Which goat's cheese works best in this salad?

Soft goat's cheese is easy to break into pieces and has a lovely creamy texture. You can also use a goat's cheese log and slice it into rounds.

How long does the spinach salad keep?

It's best enjoyed fresh. Once the dressing is on, serve it right away, otherwise the spinach quickly turns soft.

Can I make a vegetarian version?

Yes, simply leave out the Serrano ham or swap it for crispy roasted chickpeas to keep a similar crunch.
