Oopsies are the fluffy answer to classic bread when you're cutting back on carbs. These light-as-air cloud rolls work brilliantly as burger buns, flatbread, panini or even a pizza base. Their secret is stiffly whipped egg white, which gives them a wonderfully airy, almost floating texture. The basic recipe needs just three ingredients and comes together in no time.

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions

  1. Preheat the oven to 150C (fan 130C) and line a baking tray with baking paper.
  2. Separate the eggs. Stir the yolks together with the cream cheese and a pinch of salt until smooth.
  3. In a clean, grease-free bowl, whip the egg whites until very stiff, so you have firm peaks.
  4. Gently fold the whipped whites into the yolk and cream cheese mixture in several batches, keeping in as much air as possible.
  5. Spoon the mixture into about 6 even mounds on the prepared tray. Sprinkle with sesame or nigella seeds, if you like.
  6. Bake in the preheated oven for about 25 minutes, until golden. Let the oopsies cool completely before filling.
  7. Use the finished oopsies as burger buns (try them with salad, cheese, patties, gherkins, crispy onions or tomatoes) or as panini with salad, tomatoes and mozzarella. You can also melt cheese over the top, or stir sesame, nigella seeds or cheese straight into the batter.
