Nut-Crusted Pan-Fried Feta
Crisp on the outside, creamy in the middle: this crumbed feta is a real showstopper on the plate. A nutty coating of sesame and ground almonds gives the cheese a gorgeous golden-brown crust with a rich, toasty flavour. Serve it with a fresh salad or some pan-fried veg and you've got an easy but impressive dish for two.

- 2 blocks feta, 200 g each
- 2 tbsp sesame seeds
- 3 tbsp ground almonds
- 2 eggs
- pepper, to season

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions
- Beat the eggs in a shallow bowl and season with a little pepper.
- In a second shallow bowl, make the coating: mix the sesame seeds and ground almonds together thoroughly.
- Turn each block of feta first in the beaten egg until fully coated, then press it into the nut mixture to crumb it all over.
- Heat a frying pan over low heat and slowly fry the crumbed feta on both sides. Turn the heat up briefly at the end to get a golden-brown crust.
- Serve the crumbed feta straight away, for example with a fresh salad or some pan-fried vegetables.

Yes, ground hazelnuts or walnuts work really well in the coating too.
How do I stop the coating falling off in the pan?
Turn the feta thoroughly in the beaten egg first, then press the nut coating on firmly. Fry over low heat and don't turn the cheese too often.
