Kohlrabi Vegetable Lasagne
Instead of pasta sheets, wafer-thin slices of kohlrabi take on the role of the lasagne layers here. The result is a juicy, aromatic vegetable lasagne with no pasta at all, and it holds its own against the classic. A hearty beef and tomato filling with crème fraîche and herb cream cheese brings plenty of flavour. A satisfying dinner the whole family will love.
Ingredients
- 2 kohlrabi, about 700 g, peeled and thinly sliced
- 1 large onion
- 1 clove garlic
- 500 g beef mince
- 200 g chopped tomatoes, tinned, with juice
- 200 g crème fraîche
- 100 g herb cream cheese, or plain cream cheese with a handful of chopped fresh herbs stirred in
- 100 g grated cheese
- pepper, salt, oregano, basil, to taste
- oil, for frying

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Instructions
- Preheat the oven to 180C (fan 160C).
- Peel the kohlrabi and cut into thin slices with a knife or a mandoline.
- Cook the kohlrabi slices in a pan of lightly salted water for about 10 minutes until tender, then drain and set aside.
- Meanwhile, finely dice the onion and garlic and fry in a pan with a little oil over medium heat.
- Add the beef mince and fry together with the onion until crumbly and browned.
- Stir in the chopped tomatoes, crème fraîche and herb cream cheese. Season with pepper, salt, oregano and basil. For a deeper tomato flavour, stir in a little tomato purée if you like. Let everything simmer briefly.
- In a baking dish, start with a layer of the meat sauce, then alternate meat sauce and kohlrabi slices. Finish with a layer of meat sauce on top.
- Sprinkle the top layer evenly with the grated cheese.
- Bake the lasagne in the preheated oven for 25 minutes. For a crispier top, switch to the fan setting for the last few minutes.

Yes, you can layer the lasagne with courgette, aubergine or tomato slices too. A mix of different vegetables works well.
Is this kohlrabi lasagne really gluten-free?
Yes, since no pasta sheets are used, the recipe is gluten-free as written. Just double-check that all the products you use (such as cream cheese) contain no gluten-based additives.
Can I make the lasagne vegetarian?
Of course. Simply leave out the beef mince or replace it with soya mince or tofu.
