Grilled Salmon, Courgette & Feta Foil Parcels
Juicy salmon fillets, tender courgette and tangy feta: wrapped in foil, these three ingredients turn into a fuss-free summer dish that takes barely any effort yet still impresses. The parcels cook gently in their own steam, so the salmon stays lovely and moist while soaking up the flavour of herb salt and olive oil. Because each parcel is wrapped individually, your grill stays free for plenty of other goodies at the same time.

- 2 salmon fillets, fresh or frozen; if frozen, thaw first
- 1 courgette
- 200 g feta
- a little olive oil
- to taste herb salt

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Your serving count is calculated in your browser only, it is neither stored nor transmitted.
Instructions
- Wash the courgette and cut into thin slices.
- Lay out a large enough piece of foil for each parcel and drizzle a little olive oil onto it.
- Arrange the courgette slices evenly on the foil, scatter over the feta and lay the salmon fillet on top.
- Season everything with herb salt.
- Fold the foil into a sealed parcel and close it well so no steam can escape. You can make the parcels as large as you like. The key is to layer the ingredients so everything cooks evenly.
- Place the parcels on the grill and cook for 15 to 20 minutes, depending on the heat.
- To check, carefully open one parcel and test the salmon. Once the salmon is cooked through, everything else will be ready to eat too.
