Green Asparagus on a Bed of Rocket
Tender green asparagus meets peppery rocket, juicy tomatoes and creamy mozzarella in a dish that comes together in minutes yet looks impressive on the plate. The contrast of warm asparagus over a fresh, cool salad is a real treat, especially when asparagus is in season. Finish with a drizzle of balsamic glaze and, if you like, a touch of coconut oil that melts gently over the warm spears. Light, full of flavour and wonderfully low-effort, this is perfect for a relaxed evening at home.

- 4-5 spears green asparagus
- 1-2 handful rocket, known as arugula in the US
- 2-3 tomatoes
- 60 g mozzarella
- balsamic glaze, to taste
- olive oil, to taste
- 2-3 tsp coconut oil, optional

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Instructions
- Cook the green asparagus in lightly salted and lightly sugared water for about 10 to 15 minutes, until tender but still with a bit of bite.
- Meanwhile, wash the rocket and tomatoes. Spread the rocket out over a flat plate. Slice the tomatoes and arrange them over the rocket.
- Season the salad with salt and pepper and drizzle with a little olive oil.
- Slice the mozzarella and lay it over the tomatoes. Drizzle everything with balsamic glaze.
- Place the warm, just-tender asparagus on top of the salad. If you like, let a little coconut oil melt over the warm spears.
