  • 250 ml single cream, or a light cream alternative

  • 1 tbsp curry powder

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Instructions

  1. Peel and dice the onion, then fry in a large pot with a little oil until softened and translucent.
  2. Add the beef mince and fry alongside the onion until browned.
  3. Meanwhile, trim and clean the leeks and mushrooms. Slice the leeks into rings and the mushrooms into slices.
  4. Add the prepared vegetables to the pot with the mince and season with salt and pepper.
  5. Pour in the vegetable stock and let everything simmer over medium heat for about 20 minutes.
  6. Stir in the cream, melting cheese and curry powder, mixing well until smooth.
  7. Taste and adjust with more pepper if needed. Let the soup rest over low heat for a few minutes, then serve.
