Cheesy Baked Courgette
This baked courgette bake comes together quickly and makes a lovely low-carb dinner. Layer by layer, you build up juicy courgette, aromatic tomatoes, melting mozzarella and a golden, bubbling cheese topping right in the baking dish. The recipe is endlessly adaptable, so you can try a new combination every time. Serve it with a crisp green salad or a small piece of meat.

- some grated cheese, for topping
- 125 g mozzarella
- pepper and herb salt, to taste

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Instructions
- Preheat the oven to 200C (fan 180C).
- Wash the courgette and slice lengthways. Peel the onion and finely dice or chop it.
- Line a large baking dish with a layer of courgette slices. Scatter over the diced onion and herbs, then drizzle with a little olive oil.
- Add another layer of courgette slices and season well with herb salt and pepper.
- Wash the tomatoes, slice them and spread evenly over the courgette.
- Bake in the preheated oven at 200C (fan 180C) for 15 minutes.
- Slice the mozzarella and arrange it over the bake, then scatter the grated cheese on top.
- Bake for a further 15 minutes or so, until the cheese is melted and golden. Serve hot.
