Aubergine Bake with Mozzarella and Tomato
This aubergine bake layers tender grilled aubergine slices with a punchy tomato-basil sauce and melted mozzarella for a light, aromatic dish with real Mediterranean flair. It comes together with very little fuss, and because it skips the flour and pasta entirely, it's naturally gluten-free and low in carbs. Perfect for anyone who wants something delicious on the table without much effort.

- 100 g light mozzarella

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Instructions
- Preheat the oven to 200C (fan 180C). Wash the aubergine and cut into finger-thick slices. Arrange on a baking tray lined with baking paper and grill in the oven for 5 to 7 minutes on each side.
- Dice the onion and finely chop the garlic. Wash the tomatoes, remove the core and dice.
- Sweat the onion and garlic in a pan with a splash of water until translucent. Add the tomatoes and season everything with salt, pepper, oregano and finely chopped basil. Let the sauce reduce over low heat for about 10 minutes.
- Cut the mozzarella into thin slices. Spread 2 tbsp of tomato sauce in a small baking dish, add a layer of aubergine, then more tomato sauce on top. Keep layering aubergine and mozzarella alternately until everything is used up, finishing with a layer of mozzarella.
- Bake at 175C (fan 155C) for about 15 minutes, until the cheese is golden and bubbling.
