Crunchy Coconut Granola
This crunchy coconut granola is a wonderfully nutty low-carb breakfast that you bake once and enjoy for weeks. The combination of desiccated coconut, ground and chopped almonds, and walnuts gives it real bite along with plenty of good fats. Scattered over yogurt or quark as a crunchy topping, it makes an instant impression. If you need a few more carbs, simply work some oats into the mix.
Ingredients
- 4 egg whites only, save the yolks for something else, such as scrambled eggs
- 200 g desiccated coconut
- 100 g ground almonds
- 100 g sunflower seeds
- 50 g chopped almonds
- 50 g chopped walnuts
- lukewarm water, as needed, to make the mixture crumbly
- 1 tsp honey or 2 tbsp honey or erythritol sweetener, optional, for sweetening; Xucker is a German erythritol brand, use any granulated erythritol or sweetener

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Instructions
- Preheat the oven to 130C (fan 110C).
- Separate the eggs. You only need the whites here; use the yolks another time, for example in scrambled eggs that evening.
- In a large bowl, thoroughly mix the egg whites, desiccated coconut, ground almonds, chopped almonds, sunflower seeds and chopped walnuts.
- Stir in the erythritol sweetener if using. Add just enough lukewarm water for the mixture to turn crumbly.
- Spread the mixture out evenly on a baking tray. If you'd like to use honey, drizzle 1 teaspoon finely over the whole surface now.
- Bake in the preheated oven for 60 minutes. After about 30 minutes, give the mixture a stir so the granola crisps up evenly and turns golden brown.
- Let the finished coconut granola cool completely, then store it dry in a sealed container.
