Pancakes without wheat flour: eggs, almond flour and a splash of milk come together in a batter that's low in carbs and keto-friendly. The pancakes still turn out lovely and fluffy, and they're ready in just a few minutes. You can use oat bran instead of almond flour if you prefer.

  • eggs
  • almond flour
  • oat bran
  • milk
  • salt
  • blueberries, or other fruit
  • nuts, such as almonds

Instructions

  1. Whisk the eggs and milk together.
  2. Add the almond flour, oat bran and salt and blend into a smooth batter.
  3. Fold in a few blueberries.
  4. Heat a frying pan until hot and pour in the batter.
  5. Cook the low carb pancakes until golden brown on both sides and serve with fresh fruit and nuts.
