Made with ground almonds instead of flour, this little sponge cake is the perfect small baking treat when you're keeping an eye on carbs. It comes together in no time, bakes up wonderfully light and fluffy, and the whole recipe works out at only around 7g of carbs. Whether you fancy a slice after a spring walk or just something sweet in the afternoon, this cake is on the table in under 30 minutes.

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Instructions

  1. Preheat the oven to 200C (fan 180C).
  2. Put the butter, ground almonds, eggs, sweetener, baking powder and salt into a bowl and beat with a mixer until you have a smooth, creamy batter.
  3. Spoon the batter into one or two small baking moulds and bake in the preheated oven for 15 to 20 minutes. Check with a skewer: if it comes out clean with no batter clinging to it, the cake is done.
  4. Let the cake cool completely, then finish with a light dusting of icing sugar.

Can I use regular sugar instead of sweetener?

Yes, you can use regular sugar, but it will noticeably increase the carb content. For a genuinely low-carb version, stick with erythritol or another sugar substitute.

Is this cake gluten-free?

Since the recipe uses ground almonds as its base and contains no flour, it's naturally gluten-free. Just double-check that your baking powder is certified gluten-free.

What baking tin works best?

Small muffin cases, mini loaf tins or ramekins all work well. The quantities given here are enough for one or two small moulds.
