Gluten-Free Carrot Cake
A moist carrot cake with no wheat flour at all: grated carrots and ground almonds keep the crumb wonderfully damp and naturally gluten-free. It's finished with a creamy topping that you can also make with cottage cheese. If you know it as Swiss Ruebli cake, it's the same lovely bake.

Frequently asked questions
What replaces the flour in this gluten-free carrot cake?
Ground almonds give the batter structure and keep it moist. That means no wheat flour is needed and the cake stays gluten-free.
Can I make the frosting with cottage cheese?
Yes. Blend cottage cheese until smooth, then mix it with a little cream cheese and your choice of sweetener. Let the cake cool completely before frosting.
Is Ruebli cake the same as carrot cake?
Yes. "Ruebli" is the Swiss German word for carrot, so Ruebli cake is simply the classic Swiss-style carrot cake.
