A moist carrot cake with no wheat flour at all: grated carrots and ground almonds keep the crumb wonderfully damp and naturally gluten-free. It's finished with a creamy topping that you can also make with cottage cheese. If you know it as Swiss Ruebli cake, it's the same lovely bake.

Ingredients

  • carrots, finely grated
  • eggs
  • ground almonds, or ground hazelnuts
  • baking powder
  • margarine, or almond butter
  • apple cider vinegar
  • liquid sweetener, equivalent to 150 g sugar
  • almond milk, a splash
  • cinnamon
  • nutmeg
  • salt
  • cream cheese
  • low-fat quark, or thick Greek yogurt
  • powdered erythritol, or icing sugar or agave syrup
  • walnuts

Instructions

  1. Preheat the oven to 190C (fan 170C).
  2. Finely grate the carrots and separate the eggs.
  3. Whisk the egg whites with a pinch of salt until stiff.
  4. Beat the egg yolks with the sweetener until pale and fluffy, then stir in the ground almonds, baking powder and almond milk, one after another.
  5. Knead in the soft margarine or almond butter and the finely grated carrots.
  6. Finally, gently fold in the beaten egg whites.
  7. Bake in a well-greased round springform or silicone cake tin for about 60 minutes.
  8. Meanwhile, blend the cream cheese, low-fat quark and powdered erythritol or agave syrup until smooth and creamy.
  9. Let the carrot cake cool in the tin for about 10 minutes, then turn it out onto a wire rack to cool completely.
  10. Spread the cream cheese frosting over the cake and decorate with walnuts.
