These little chocolate nut clusters with almonds and walnuts are the perfect treat for the festive season. Dark chocolate with 85 to 90 percent cocoa wraps around crunchy roasted nuts, while a topping of toasted sesame and fleur de sel brings together a tempting mix of sweet, nutty and salty. They come together in no time, need barely any ingredients and make a lovely homemade gift. Give them a try and enjoy.

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Instructions

  1. Preheat the oven to 170C (fan 150C). Spread the almonds and walnuts on a lined baking tray and roast for about 10 minutes. Take them out and let them cool completely.
  2. Melt the dark chocolate in a bain-marie over low heat. Tip: bring a little water to a gentle simmer in a saucepan, set a small heatproof bowl on top and let the chocolate melt in it. Keep the heat low, as chocolate shouldn't get too hot.
  3. Stir the ground vanilla into the melted chocolate.
  4. Turn the cooled nuts one at a time in the liquid chocolate and lift them onto a fresh piece of baking paper with a fork.
  5. Sprinkle the clusters straight away with toasted sesame seeds and a small pinch of fleur de sel.
  6. Let the chocolate set at room temperature. Your chocolate nut clusters are ready.
