Banana Waffles
These banana waffles are a real find for anyone who loves something sweet but keeps an eye on carbs. Ground almonds stand in for the usual flour and, together with a ripe banana, give the waffles a nutty, fruity flavour that's so good you'll hardly believe how few carbs they contain. With just around 32 g of carbs across the whole batch of 12 waffles, they're a lovely choice for mindful eating. Whether you serve them with coffee, as a dessert or a little breakfast, these waffles are bound to become a regular.

- 150 g butter, softened
- 1 banana, mashed
- 6 eggs
- 3 tsp stevia, or another granulated sweetener of your choice
- 150 g ground almonds
- 0.5 tsp baking powder

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Instructions
- Beat the softened butter in a bowl until light and fluffy, then stir in the mashed banana.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, combine the stevia, ground almonds and baking powder.
- Add the almond mixture to the butter and egg mixture and stir until evenly combined.
- Heat up your waffle iron or sandwich toaster and lightly grease it before the first batch.
- Cook the waffles until they reach your preferred golden colour. Tip: it's better to cook them a little longer on a medium setting than to blast them on the highest heat, as this gives a better result. The batter makes about 12 waffles.
