Spinach & Salmon Roll
This spinach and salmon roll is the perfect finger food for a cold buffet: a moist spinach omelette on the outside, wrapped around a creamy filling of soft cheese, smoked salmon and mustard. It's brilliant to make ahead and looks genuinely impressive on the platter. Just slice, serve and enjoy the compliments.
Ingredients
- 200 g leaf spinach, frozen, thawed and squeezed dry
- 4 eggs
- 30 g grated cheese for gratin, such as Gruyère or Emmental
- 1 pinch nutmeg
- salt and pepper, to taste
- 100 g low-fat soft cheese
- 100 g smoked salmon
- 1 tsp mustard

How this is calculated
Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.
Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Anyone who has to keep amounts exact for medical reasons, for example during a nutrition therapy prescribed by a doctor, should discuss them with a doctor or a registered dietitian. Your serving count is calculated in your browser only, it is neither stored nor transmitted.
Instructions
- Preheat the oven to 200C (fan 180C).
- Squeeze the thawed spinach well to remove excess water, then blitz to a purée.
- Separate the eggs. Mix the yolks with the spinach purée and the grated cheese. Season with nutmeg, salt and pepper.
- In a clean bowl, whisk the egg whites to stiff peaks and gently fold them into the spinach and egg mixture.
- Line a baking tray with baking paper and spread the mixture over it in a thin, even layer.
- Bake on the middle shelf for 15 minutes, then leave to cool completely.
- Carefully peel the baking paper away from the cooled omelette and lay the omelette on a sheet of foil.
- Spread the soft cheese evenly over one side of the omelette, arrange the smoked salmon in a thin layer on top, then spread over the mustard.
- Roll the omelette up tightly, wrap it in the foil and chill in the fridge for at least 30 minutes.
- Unwrap the roll and cut into slices 1 to 2 cm thick. Serve.
