Peppery rocket, caramelised goat's cheese and crunchy walnuts: this salad comes together in just a few minutes yet looks and tastes like a real treat. A punchy balsamic dressing with a hint of mustard and tomato purée pulls everything together beautifully. Perfect as a light lunch or as a side at your next barbecue.   • 200 g goat's cheese, or Parmesan
  • 20 g walnuts, or pine nuts
  • 150 g cherry tomatoes
  • 0.5 cucumber
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey, for caramelising the goat's cheese
  • 1 tsp mustard
  • 1 tsp tomato purée
  • 2 tbsp water
  • salt

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Instructions

  1. Wash the rocket, roughly chop it and spread it out over a plate.
  2. Halve the cherry tomatoes and slice the cucumber. Arrange both over the rocket.
  3. Slice the goat's cheese. Heat 1 tsp honey in a pan until it caramelises, then fry the goat's cheese slices on both sides until golden.
  4. Scatter the fried goat's cheese and the walnuts over the salad.
  5. For the dressing, whisk together the olive oil, balsamic vinegar, mustard, tomato purée and water until well combined. Season with salt and pepper.
  6. Drizzle the dressing evenly over the salad and serve straight away.
