Whether it's crunchy lamb's lettuce, slightly bitter endive or peppery rocket, you can choose your greens freely depending on the season and what's in the fridge. Colourful vegetables, hearty toppings like turkey strips or feta, and a good dressing turn it into something new every day. This way, your salad is guaranteed to never get boring.

Ingredients

  • Leafy salad (e.g. lamb's lettuce, mixed leaves, endive or rocket), your choice, in season
  • Tomatoes
  • Peppers, red and yellow
  • Cucumber
  • Carrots, thinly sliced or grated
  • Spring onions
  • Olives
  • Turkey breast strips
  • Eggs, hard-boiled
  • Feta cheese
  • Strawberries
  • Redcurrants
  • Goat's cheese, pan-fried in 1 tbsp honey
  • 1 tbsp Honey, for pan-frying the goat's cheese
  • Pine nuts
  • Walnuts
  • Sunflower seeds

Instructions

  1. Wash the salad leaves and all the vegetables thoroughly and cut them into bite-sized pieces. Slice the carrots thinly or coarsely grate them, whichever you prefer.
  2. Toss all your chosen ingredients together in a large bowl, or arrange them straight onto the plate.
  3. Add toppings to taste: try turkey breast strips, hard-boiled eggs, feta, strawberries, redcurrants, pine nuts, walnuts or sunflower seeds.
  4. For the goat's cheese topping, fry the cheese in 1 tbsp honey in a small pan until golden, then spoon it over the salad while still warm.
  5. Choose a dressing to suit your taste and drizzle it over the salad just before serving.
