This salad is a real showstopper at any barbecue: the earthy sweetness of pre-cooked beetroot meets crunchy walnuts, creamy feta and the unmistakable tang of pomegranate molasses. Orange zest and lime juice bring a fresh, gently citrusy note to the dressing. It comes together in minutes and is happy to sit for a little while so all the flavours can mingle.

How this is calculated

Target amount = ingredient amount × target servings ÷ base servings. The result is then rounded for kitchen use: from 100 g or ml to the nearest 5, between 1 and 99 to the nearest 1, pieces and spoons to half units, amounts below one unit to quarters, thirds or halves. Teaspoons and tablespoons also go down to an eighth, kilograms and litres stay finer.

Total = value per serving × target servings. The value per serving is unchanged, because ingredient amount and serving count change by the same factor.

Nutrition values are estimates from the recipe record, not laboratory results. Even for checked labels the EU sets tolerances: for fat, protein and carbohydrates 20 percent in the range of 10 to 40 g per 100 g, and 2 g per 100 g below that. Home cooking varies more, because variety, size and cooking loss of the ingredients differ. Kitchen rounding also shifts the total slightly against the plain rule of three. Instructions

  1. Cut the beetroot into cubes and tip into a large bowl.
  2. Crumble the feta coarsely with your hands or a fork.
  3. Roughly chop the walnuts. Handy tip: pop them in a freezer bag and crush with a rolling pin - it's quick and keeps your worktop clean.
  4. Wash the orange in hot water and finely grate the zest. Rinse the thyme and strip off the leaves.
  5. Combine the beetroot, feta, walnuts, orange zest and thyme leaves in the bowl.
  6. For the dressing, whisk together the juice of the lime, the juice of half the orange, the olive oil, pomegranate molasses and a little salt.
  7. Pour the dressing over the salad, taste and adjust the seasoning, then let it sit for a few minutes before serving.
