A light Asian summer salad with radishes, watermelon, rocket and cottage cheese, tossed in a zingy ginger dressing. Low in carbs and ready in 15 minutes.

Ingredients

  • 1 bunch radishes
  • 200 g watermelon, flesh only
  • 150 g rocket, arugula in the US
  • 0.5 bunch flat-leaf parsley
  • 2 cm fresh ginger
  • 1 lime, small
  • 1.5 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp olive oil
  • 1 tsp sweet chilli sauce
  • 150 g cottage cheese

Instructions

  1. Wash the radishes and slice them thinly. Cut the watermelon into cubes. Wash the rocket and spin it dry. Wash the parsley, pick off the leaves and chop them roughly. Toss everything together in a large bowl.
  2. Peel and finely grate the ginger, then add it to a small bowl. Pour in the soy sauce, sesame oil, olive oil, sweet chilli sauce and the juice of the lime, and whisk together.
  3. Arrange the salad on plates, drizzle over the dressing and serve the cottage cheese alongside.
