Zoodles are noodles made from courgette. So even if you're cutting back on carbs, you don't have to give up your favourite pasta night. Any sauce you'd normally serve with regular noodles works just as well with zoodles, the courgette version.

How to make zoodles

Zoodles are usually spiralised into noodle shape using a spiraliser, though a simple vegetable peeler works just as well in a pinch. We've already tried and tested two of these gadgets for you.

Cooking them: quick-boiled or pan-fried

These veggie noodles only need a couple of minutes simmered in water, or a quick turn in a pan with just a splash of oil. Season with salt and pepper afterwards, then serve with your favourite sauce or a homemade pesto.

Koodles and moodles: veggie noodles from kohlrabi and carrot

Courgette isn't the only vegetable that works this way, by the way. Kohlrabi makes lovely noodles too (call them koodles, if you like), and carrots turn into what we'd call moodles. Give it a go, you'll find you barely miss classic pasta after a while.
